BUNguyenI asked:

I saw Good Eats episode where Mr. Brown sticks fish into some hot oil and pops it in the oven. He called it oil blanching. Isn’t this the same exact thing as just deep frying the fish but maybe at lower temperatures?
I understand that water and oils are polar opposites. So basically oil blanching is mainly for flavor while frying is mainly just to cook the food?
In my experience oil burns more…a hell of alot more.
I’ve been researching and chinese use oil blanching as a key method of making their meats super soft juicy and tender with almost a creamy consistency. How does this work at a chemical level compared to frying at high temperatures?

I am going to fry chicken wings and the recipe says to make sure the oil is a certain temp. I don’t have any way to know how hot the oil is, are there any ways of figuring this out? I am making the wings in 20 minutes so I can’t go out and buy a thermometer.

MKN asked:

I cannot control the temperature of this Foreman grill, it’s the kind that you plug in and that’s it.

Should I use a non-stick spray or use regular oil? Can I use extra virgin olive oil, or does it get too hot for that? Which types are safe and will not reach their “smoke point” on the Foreman?

Right now I’m using a store-brand canola-based spray, and it smokes quite a bit.

I haven’t fried anything in the oil for almost 2 months. I used it to fry chicken 2-3 times, but haven’t used it since. It has been covered in the fry-daddy cooker, and not refrigerated.

It is store-brand pure vegetable oil, if that makes any difference.

Is the oil still good to use for cooking or should I toss it?

I have just begun cooking with olive oil and sometimes grapeseed oil. Is there a trick to know when to use vegetable oil instead? I mainly mean when pan frying or sauteing meats and vegetables, but am interested in all ideas. Thanks.

brooklynsquest asked:

Blended cooking oil has soybean oil, canola oil, and one brand added olive oil in their blended oil.
All the cooking oils stated they had 0 trans fat.
Is there a difference in using one cooking oil over another kind? Is it just personal preference in selecting one of the different types of cooking oil?
